Mary and John Rolf brought Omaha, Nebraska-based franchise Scooter’s Coffee to town Sept. 15 with the opening of their first drive-thru coffeehouse at 2930 S. Campbell Ave. Mary Rolf said she operates their JMBSR Enterprises LLC, while her husband John continues in insurance sales at AmWins Group. The compact, 450-square-foot store serves coffee, tea, smoothies, breakfast burritos and pastries. The couple spent $40,000 on franchise fees, plus $250,000 on the new stand-alone building by general contractor Nesbitt Construction Inc. Hood-Rich Inc. provided architecture, Mary Rolf said, and will continue on future projects. Three more Springfield shops are planned, and the next is scheduled to open Dec. 29 at 3529 E. Sunshine St. A Nixa location may feature a walk-in coffee shop, she said. Having never run a food service business before, Rolf said she and management spent a few weeks in training at the Scooter’s Coffee headquarters.
