Vital Farms officials say the plant will have egg processing, grading, quality inspection, packing and transportation operations, and when complete it is expected to create 50 full-time jobs in its first year. Vital Farms – known for its pasture-raised eggs – supplies some 6,000 retailers, including Whole Foods Market, Target and Kroger. In April, Vital Farms hired Tricia Clark from Kraft Heinz Co. management to lead the launch of the Springfield plant as vice president of operations.
