Project description: Franchisees Mary and John Rolf plan to open their first Scooter’s Coffee in town less than a year after signing a franchise agreement with the Omaha, Nebraska-based drive-thru coffee chain. Contractor Michael Nesbitt of Nesbitt Construction Inc. said the single-story design is a prototype in a synthetic stucco and fiber cement exterior. The drive-thru lane is constructed with pervious concrete to help control stormwater runoff, he said. Scooter’s specializes in coffee, tea, smoothies, breakfast sandwiches/burritos, cookies and pastries. The Scooter’s Coffee near the northwest corner of Campbell Avenue and Battlefield Road is among four the Rolfs plan to open in Springfield, with a fifth slated in Nixa, according to Springfield Business Journal reporting. The closest Scooter’s operates in Rolla, according to ScootersCoffee.com, and there are over 150 stores in 13 states.
