City Butcher opening east-side food truck

City Butcher LLC is opening an east-side food truck to meet Springfield’s demand for finger-licking-good barbecue.

Front of house manager Dalton Alday said the shop — in the form of a trailer — at the Southern Hills Shopping Center on East Sunshine Street between Hudson Hawk Barber & Shop and Braum’s opens Wednesday.

“We wanted to offer quick, easy access to barbecue,” Alday said of the reason behind the food-truck model.

Cooking and prep work for the food will continue to be done at the company’s south-side location on Campbell Avenue, and the food truck will offer the same food, including sandwiches, Texas-style smoked meats and sides.

The food truck will be open 11 a.m.-7 p.m., or until sold out, Wednesdays through Saturdays. Although Alday said the focus is grab-and-go meals, there will be picnic tables for those who want to eat on-site.

With a new store will come about a 100 percent increase in production over what the restaurant is producing currently, Alday said.

“On a busy Friday or Saturday we’ll do a couple hundred to a few hundred pounds of brisket, and similar with pulled pork. It’s quite a bit,” he said with a laugh.

Alday said since opening in November 2014, City Butcher has “tripled our smoker capacity” and expanded into the space next to its South Campbell location for more seating after a year in business.

City Butcher owner Cody Smith opened CB Social House downtown with then business partner Jeremy Smith in 2016. The restaurant and bar also featured an on-site butcher market.

Earlier this year, CB Social reopened as Social on Patton as Jeremy and Cody Smith sold their ownership to an anonymous ownership group, according to past Springfield Business Journal reporting.

“We were getting so busy over here, he wanted to come back over here for the barbecue side of things,” Alday said of the reason behind Cody Smith’s departure from CB Social.

He said City Butcher is now focused on its new food truck and continuing to grow its catering offerings.
