Springfield Gourmet Taco Co. will exit its current location at 3120 E. Sunshine St. and change its name to Great American Taco Co. when it enters a new space under construction at 2915 E. Battlefield Road.

Springfield Gourmet Taco Co., operated by Metropolitan Grill chef and owner Pat Duran through Blue Basil LLC, has called the Sunshine location home since 2013, when another Duran venture, Sante Fe Grill, closed.

Duran said the menu and concept of Springfield Gourmet Taco Co. would not change with the move, planned for the second week of November.

He added the name change reflects the company’s plan to create a franchise out of Great American Taco Co., which will go by American Taco University in college town markets. Although a deal has not yet been inked, Duran said he is pursuing the first franchise opportunity in Bentonville, Ark.

When the move is complete, Great American Taco Co. would occupy roughly 3,000 square feet on the ground floor of the two-story structure owned and developed by Magers Management Co. on East Battlefield Road.

“We’ve almost doubled the dining space,” Duran said. “It has a different configuration and a smaller kitchen so we will increase capacity.”

He added the current location seats about 89 diners, whereas the new space will seat 112 inside and an additional 40 on an outdoor patio.

According to Greene County assessor records, the 3,220-square-foot space at 3120 E. Sunshine St. is owned by Sunshine 3120 LLC, and has a combined 2015 assessed value of $206,110 for the land and building. Duran declined to disclose details of the restaurant’s current lease with owner Tim Roth or future lease with Magers Management Co.

The 2,696-square-foot second-floor office space at 2915 E. Battlefield Road is being marketed for $18 per square foot per year triple net – roughly $4,044 per month – and would share a common area with the restaurant, according to a listing on leasing company Sperry Van Ness/Rankin Co.’s website.
