Hy-Vee adding full-service restaurant in Springfield

West Des Moines, Iowa-based Hy-Vee Inc. is bringing its new full-service restaurant concept to the Queen City.

Mike Hoppman, Springfield Hy-Vee store director, said the Market Grill restaurant - with a menu including foods from pizza and burgers to steaks and pasta - likely would open in two to three weeks. He said the $1.3 million expansion led by Kansas City-based Burns & McDonnell is taking the place of its former casual dining area and Caribou Coffee shop in the southeast corner of the 1710 W. Battlefield Road store. The store will continue to have casual dining in a food-court style setting.

Hoppman said the restaurant, including a full bar, would employ around 50, bringing the Springfield store’s workforce above 600.  

Hy-Vee operates nearly 100 Market Grill restaurants.

Coffee changeup
This week, the Springfield Hy-Vee store replaced its Caribou Coffee stand - in place since the store opened in October 2011 - with a Starbucks cafe.

Located in the front of the store, Hoppman said the coffee shop opened Monday. He said the decision to change came down to Caribou’s brand recognition.

“They’re a good outfit, a good operation. The biggest problem is it was a Minnesota-based company. You get this far south, and there’s just a handful of people who know what Caribou is,” he said.

Sales at the shop were less than half a percent of total store sales, Hoppman said, noting the ideal number is closer to 1 percent of all sales. He said the power of the Starbucks brand likely could generate that return.

The Starbucks shop employs 12-14, including four who came over from Caribou.
